Friday to me is a day for treats! This one is absolutely scrumptious without breaking the bank.

I try to avoid sweets throughout the week. For so many reasons - my health, my skin, to avoid feeling sluggish. However, I've reserved Fridays as a treat day. 
That doesn't mean I scarf down every sweet in sight, it doesn't even mean that I indulge in incredibly sinful delights!

I just take a bit of time to whip up something yummy for a treat after dinner.
Sometimes it's cookies, or a nice hot chocolate, perhaps a chocolate pudding.

Today it was banana bread.
Let me tell you - I have never had banana bread before. Nope, never.
I've had banana muffins and pancakes, but that's about it.
So, I was a little intimidated, simply because I've never made it before.

No need for that, apparently! I came up with an incredibly easy, cheap and delicious banana bread recipe that will put a smile on your face.

What do you need?

✦ Bananas - obviously. 2-3 very ripe bananas
✦ 1 large egg
✦ 1/4 cup of coconut oil (liquid)
✦ 3tbsp of plain Greek yogurt - keeps things delightfully moist
✦ Vanilla extract - use the good stuff, you only need a little bit
✦ 1 to 1 1/2 cup of flour - don't add too much, the batter should be akin to thick pancake batter
✦ 1/2 tsp bicarbonate of soda
✦ 1tsp baking powder
✦ 2/3 cup of granulated sugar - don't add too much, bananas are already sweet
✦ pinch of cinnamon
✦ pinch of salt

How to make it?

✦ Preheat your oven to 190-200C
✦ Mash the bananas in a bowl until there are only little lumps left
✦ Add the egg and whisk for about a minute until it's light yellow and fluffy
✦ Add the yogurt and whisk again
✦ Add the coconut oil, vanilla extract and sugar and whisk until thoroughly incorporated
✦ Sift in the flour together with the bicarbonate of soda and baking powder
✦ Mix with a spatula or a fork to incorporate the flour well without leaving lumps
✦ Add the salt and cinnamon and give it one last mix through
✦ Pour into your baking tray of choice, either lined with parchment paper or very well greased. I used a  small rectangular cake tin, since I didn't have a loaf mold.
✦ Bake for 30 to 45 minutes, checking every 25, until it's beautiful golden brown in color and a toothpick inserted into the bread comes out clean.
✦ EAT! I mean let it cool, take a slice and enjoy it with a glass of milk

Now you have the amazing banana bread to nosh on.
It might seem like many steps, but the batter comes together in less than 10 minutes and the rest is just...waiting... 

The bread comes out wonderfully soft and moist, with the beautiful banana flavour coming through clearly, and just a hint of coconut, vanilla and cinnamon.
By not adding lots of sugar and flour we made sure the sweetness isn't overwhelming and it's not tough and heavy.

I had a piece and realized that this delicious banana bread is the second best friend to milk after chocolate chip cookies!
